Tim Lawrence Co-Owner
Tim's skill within the kitchen has been the driving force behind the achievement of an AA rosette award in October 2004. Continually re-developing the content and style of our menu based on the locality of Sandsend and our geographical link with the sea and moors. Tim's experience is derived from working as head Chef at Trenchers restaurant in Whitby with the original founder, Terry Foster.
David Cross Co-Owner
Initially trained as a food scientist, and having worked within the food industry developing food hygiene and safety standards for a number of years. David has now developed, with the help of our team, Estbek's ever improving standards which focus on attention to detail. Also having a keen interest in wines recently undertaking a Diploma examination in wines & spirits and, thus helping further expand our listings!
James Chef
The longest serving member of our team, working at Estbek for over 9 years. Working closely with Tim, James has helped steer Estbek and our menu gaining accolades and awards. James is a key member of the team, and well liked by all who work with him.
Gill Housekeeper
Having started working at Estbek in March 2010 Gill looks after our accommodation and mountains of ironing - also being James' mum, so often tells the chefs off if they spill a sauce!
Sophie Waitress
Sophie joined the team back March 2004, what a find! Being a key member of staff, lovely to work with and always popular with our customers. Sophie also works with Dawn to train our newer members of staff, ensuring our team is always developing.
Dawn Waitress
Having worked as head-waitress at Trenchers with Tim for over 20 years and being one of the town's most respected waitresses, ensuring we are always developing and looking for ways to improve. Always having time for everyone and everyone having time for Dawn. Joining our team in October 2005 and working a variety of evenings.
Jeanette Waitress
Joining our team back in September 2009 and having worked as a waitress for a number of years, Jeanette is keen and friendly, quickly becoming a key asset to the team, working a variety of nights and being well liked by all.
Sam Trainee Waiter
Joining us in October 2009 Sam is now being trained by David, Sophie and Dawn in the role of carry-out, planning on going to University in September 2010 Sam will then work during the holidays.
Anne-Marie Trainee Waitress
Joining us in August 2009 Annie works during the daytime with Sophie at Cowens Glass in Whitby, so it's ideal that Sophie is helping train her in waiting-on skills.
Rachel Trainee Waitress
Having joined our team in June 2010 learning carry-out and full waiting-on, Rachel is also studying at University taking an Arts degree.
Tom Trainee Chef
Being Tim's nephew and; always being a double of a younger Tim it is probably no surprise that he is quickly learning to help with prep during the weekends and holidays.
James Kitchen Assistant
James Auger joined our team back in the summer of 2009, working a variety of evenings, keeping pace with Tim and James' ever increasing demands for more pans!
Adrian Kitchen Assistant
Joining us in July 2010, and living locally in Sandsend Adrian is at Collage studying for his A Levels and works a variety of evenings during the week.
Mitch Kitchen Assistant
Having joined the team in August 2010 Mitch works a variety of evenings, helping keep the ever increasing mountain of pots and pans in check!
India Weekend Housekeeper
Joining Estbek in October 2009, India has become a good member of our team, now working weekends, whilst also working at a local hairdressers in Whitby during the week.
What intrigues me are the black napkins, each a work of art, folded to look like a dinner jacket.
